Rosso di Montalcino DOC
Wine of long tradition, Rosso di Montalcino is a velvet, fresh wine.
It comes from the same vineyards of the Brunello; this Sangiovese delivers incredible purity, has a persistent berries aroma and its well structured tannins allow for medium term aging. Grapes are picked at the end of September and are gently crushed, placed then into steinless steel vats where they are fermented at a controlled temperature of 28°-30°C.
During the fermentation process the wine undergoes numerous remontages and delestages to favour the extraction of aromas, tannins and colour. Skins maceration lasts from 15 to 18 days.
Rosso di Montalcino matures for short time in oaks barrels of 35 hl, then it’s bottled and remains in the cellar to age in the bottle for 4-6 months before being released. Color is ruby red, scent intense, fruity, with memories of raspberry and pomegranate; taste is fresh, intense with enduring finish.
Harmoniously balanced wine, its alcohol content is about 13,5%. It pairs well with red meat dishes, salami, ribollita and medium hard cheeses.
